Borlotti beans have a nutty flavor and are very popular in Italy, where they are used in pasta e fagioli (pasta with beans). They are ideal for aromatic spices such as rosemary, sage and basil and are a wonderful complement to stews made with tomato sauce. Borlotti beans are also used in risotto and soup.
